Carneiro Transmontano (lamb From Over The Hills)

Ingredienten: 1 lamspoot (6 pounds)
1 eetlepel zout
reuzel
1/2 cup witte wijn
1/2 cup bouillon or water
1 small ui,in plakjes
2 eieren,beaten
fine dry broodkruim (about 6 eetlepels)
Voorbereiding:
Bereidingswijze: Rub the lam all over with zout and then with reuzel.
Put on a rack in shallow roasting pan and add the witte wijn, bouillon, and the ui.
Bake in preheated slow oven (325 deg F.) for about 2 1/2 hours, basting frequently with the drippings in the pan and adding more reuzel if necessary.
When the meat is tender, remove from oven and brush with the eieren.
Sprinkle with broodkruim.
Return to the oven to brown lightly.
This dish is usually served cold, but it may also be served hot.
